These Oatmeal Haystack Cookies get their name from the layers of ingredients that shape into round mounds, similar to a haystack. They’re chewy and delicious and don’t sacrifice on nutrition.

Ingredients

  • Mix Together:
  • 2/3 cup peanut butter

  • 2/3 cup honey

  • 2/3 cup water, cold

  • 1 tsp salt

  • Add In:
  • 2/3 cup flour

  • 2/3 cup oats, quick

  • 4 cups coconut flakes

  • 1 1/2 cups nuts, chopped

  • 2 cups pitted dates, chopped

  • 1 1/4 cups carob chips (optional)

Instructions

  • Mix first set of ingredients together then add in remaining
    ingredients.
  • Using a tablespoon, form balls lightly packed together.
  • Line baking sheet with parchment paper and place each ball on
    sheet.
  • Bake at 350 degrees for approximately 20 minutes.
  • Let cool slightly, then serve.
