I absolutely love oatmeal. There’s something about it that’s so comforting. And one of my favorite breakfasts is overnight oats with blueberries. Soaking the oats overnight gives is such a delightfully chewy texture that’s creamy and oh-so-delicious.

Overnight Oatmeal with Blueberries is a quick breakfast that travels well. This creamy comfort dish is a great way to start your day.

Ingredients

  • 1 cup rolled oats

  • 1 cup plant milk, unsweetened

  • 12 teaspoons cinnamon

  • 12 cups blueberries

  • 1 tablespoon stevia (or maple syrup)

  • 1 teaspoon chia seeds (optional)

Instructions

  • Layer the ingredients in a 12 oz jar starting with the blueberries.
  • Next, add oats, cinnamon, and stevia.
  • Pour milk over oats then sprinkle with chia seeds (optional).
  • Refrigerate overnight or for at least 6 hours. 
  • The next morning, you can add additional liquid if needed. Top with fruit and/or nuts (optional). Eat it cold or warm in the microwave.
