This plant-based nachos recipe is a tasty and healthy twist on the classic dish.

Ingredients

  • Chili
  • 1 onion, chopped

  • 1 tbsp ginger paste

  • 2 cloves garlic, minced

  • 1 tsp cajun seasoning

  • 1 pinch cayenne pepper

  • 1 red bell pepper, chopped

  • 2 cans crushed tomatoes

  • 1 can black beans, drained and rinsed

  • 1 can dark kidney beans, drained and rinsed

  • 1 can coconut cream or milk

  • 1 tsp maple syrup

  • 1 tsp salt

  • 1 cup sweet corn, frozen

  • 1 handful cilantro

  • Oil-free tortilla chips

  • Cheese Sauce
  • 1 cup cashew pieces, raw

  • 1/4 tsp turmeric

  • 1/4 tsp sea salt

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tbsp rice wine vinegar

  • 1 tbsp dijon mustard

  • 2 tbsp nutritional yeast

  • 2 tbsp white miso paste

  • 1 cup low-sodium vegetable broth

Instructions

  • Chili
  • Saute onions in a pan with 1 tbsp of water until translucent.
  • Add ginger paste and garlic. Let simmer for a few minutes. Add additional water as needed.
  • Add cajun seasoning and cayenne pepper. Stir until mixed.
  • Add red bell peppers, tomatoes, and beans. Let simmer for
    about 20 minutes.
  • Add in coconut milk, maple syrup, salt, and corn. Let simmer for 5 more
    minutes.
  • Once done, sprinkle cilantro on top. To serve, layer corn chips,
    chili, fresh veggies (lettuce, tomatoes, etc.), and cheese sauce.
  • Cheese Sauce
  • Add all ingredients to a blender and blend until smooth.
  • Add broth or water as needed to get the desired consistency.

Notes

  • Add vegan refried beans and/or fresh and fried veggies (onions, bell peppers, etc.) to this dish as desired for additional flavor.
