Sweet or savory? Do you like your vegan chicken salad sweet or savory? I’m a sweet salad girl, so this recipe uses sweet relish to give a sweeter taste. If you prefer savory, then you can nix the relish and add celery and onions instead.

If you’re new to meatless dishes, you may be wondering what is vegan chicken salad made of. I’ve found that chickpeas offer the best texture and base for a vegan chicken salad.

Looking for a vegan replacement for chicken salad? This vegan chicken salad is a great one to try. Pair it with lettuce, bread, or tortillas for a satisfying meal.

Ingredients

  • Chicken-less Salad
  • 1 15 oz. can of chickpeas or roughly 1 1/2 cups cooked chickpeas

  • 1/4 cup vegan mayo

  • 1/4 cup sweet relish

  • 1 tsp lemon juice

  • 1/2 tsp old bay seasoning

  • 1/2 tsp dijon mustard

  • salt and pepper to taste

  • Vegan Mayo
  • 1 package tofu (silken or firm)

  • 2 tbsp stevia

  • 2 tbsp lemon

  • 1 1/2 tbsp Dijon mustard

  • 1/4 tsp seasoned salt

Instructions

  • For Vegan Mayo
  • Blend all ingredients in a blender.
  • Vegan mayo can be used on sandwiches, wraps, and for
    other recipes calling for mayo.
  • Store leftover mayo in
    refrigerator for up to 2 weeks
  • For Chicken-less Salad
  • Add all the ingredients (including the vegan mayo) into a food processor and pulse a few times until combined. You don’t want it too mushy but you want to break down the chickpeas and incorporate all the ingredients, so about 6-7 pulses (depending on your food processor).
  • Scrape down with your spatula and taste. Adjust seasonings to
    your liking, pulsing again once or twice to combine.
  • Serve in a lettuce wrap and add your favorite sandwich toppings. You can also serve it on bread or crackers. I like to serve it on toasted Ezekial Bread with lettuce, onions, and tomatoes. Yum! Enjoy!

Notes

  • Spice things up a bit by adding a little chipotle powder and smoked paprika to the mayo using this Chipotle Mayo recipe.
