Vegan Chipotle Mayo
This vegan chipotle mayo has a hint of spiciness to wake up any dish. Use with salads, sandwiches, or anywhere you would use mayo.
When I first started eating plant-based meals, one of the things I missed was mayo on sandwiches. I needed something to moisten the bread or add taste to salads.
Then I found this recipe for vegan chipotle mayo and life was good again. If you’re not into spicy foods, you can omit the chipotle powder and smoked paprika and you’ll still have a good mayo substitute.

Ingredients
1⁄3 cup raw, unsalted cashews
1⁄2 tbsp lemon juice
2 tsp apple cider vinegar
1 tsp Braggs liquid aminos
1⁄2 tsp Dijon mustard
1⁄2 Medjool date
1⁄4 tsp onion powder
1⁄4 tsp chipotle powder
1⁄2 tsp smoked paprika
1⁄4 cups water
Instructions
- Add all ingredients to a blender and blend until smooth.
- Use in recipes calling for mayo and enjoy!
